Hey Jolli! I used to be your average American eater, until I learned that most of us consume way too much animal protein. So to challenge myself and improve my health, I started eating what I call "two-thirds vegan." Now, two of my three meals every day are vegan, and I fill up on great foods like fresh fruits and vegetables, beans, and all sorts of hearty and nutritious plant proteins. I still love an occasional steak, but my Jolli recipes will primarily feature the vegan and vegetarian meals that make up the foundation of my diet. I try to design meals that are 50% vegetables, 25% grains, and 25% protein, and feature nutrient-rich calories you don't need to worry about counting. Hi! I’m Maggie Stanton, a Virginian who has lived in the Northeast, Midwest and Southeast Asia. I’m a wife and a mother of four. The cuisines of the places we lived have influenced my cooking but mostly my husband’s unexpected heart attack nearly 30 years ago. I immediately made red meat the exception to our menu and adopted low salt and low fat recipes. Sauces became rare as well. I stopped using butter almost entirely and substituted olive or canola oils. Whole grains have taken the place of white breads and spices have given us lots of flavor without the calories or fats.
